Millet is a good alternative to wheat. I also like to use it in the place of rice or buckwheat groats or quinoa. It's just not my favorite (personal taste) but it has good health benefits, so I'm willing to eat it.

We love buckwheat pancakes. They're great with PB & J on them or syrup or fruit or any topping. I love the health benefits of buckwheat.

different but grows on you

This would not be my favorite flour, but the taste does grow on you. I like the health benefits of the flour and am willing to eat something that's not my favorite to get good nutrients. I made the amaranth carrot cookie recipe that's on the package. I called them super cookies. My boys liked them better if I spread a little PB or Nutella on them. I will need to try a recipe that uses a mix of GF flour rather than one that is all amaranth. I think that would suit me better.

smooth and different

My 2 and 4 yr old boys ate this cereal happily. My husband and I found the taste a bit different (we're used to oatmeal) but better with sweetener. I added diced prunes. I plan to rotate this cereal as part of our regular breakfast schedule. My 11 mo old was able to eat it just as it was, with no need to puree it. The texture is very smooth.

I like buckwheat pilaf and I have used these groats ground up to make a yeast-free, egg-free, sugar-free bread.

I'm still experimenting with this grain. It's a good alternative to wheat. I like the health benefits for my 3 young kids.

too much bean taste

Okay, so there is too much bean taste. I guess that's to be expected from a bean flour. I use this flour to mix with other GF flours. I would not use it alone. I mix in only small amts b/c I don't want my baked goods to taste like bean flour. With the ratio I use, I can smell the bean flour in my batter but can't taste it. I'm ok with that.

a variety of uses possible

I prefer whole quinoa to flakes but I like the wide variety of uses for the flakes, from hot cereal to crisp topping to cookie ingredient. I like that I can also give my 11 mo old a healthy breakfast and don't have to puree it at all. She's not too fond of whole quinoa.
